I dislike throwing food money in the garbage so I often will try to squeak as much out of what we have on hand in the house. What can I say.....pinch a penny, save a buck!

I was trying to figure out what to do with some oranges that were not getting eaten, so I decided I would use the juice in some sort of dessert. I did not know what to make but then I realized I could tweak my amazing blueberry muffin recipe and make orange muffins!  Yumm!! Fresh, tasty, and
bright with flavor! Score!

Often times my sons can not eat desserts due to their dairy allergy, so I knew I wanted to make sure whatever I made was something that they could nosh on. 

I realized as I went to prepare the muffins that there were no cupcake liners in the house....can you believe it?! I'm still shocked. Ha! How could I let this one slip by unnoticed?

It's funny how a bakers mind goes from A to Z when creating a dish.  Often times it's instances like this that create AMAZING outcomes!  So, without muffin liners what to do next??  Into the loaf pans the batter went!  Our crisis was averted and I just knew I knew I was creating a winner loaf cake as the house began to smell of fresh citrus! 

The best part about this dessert is that I feel good about its ingredients, I feel GREAT that I can serve something to my family that is safe for my allergy kids, and I feel AMAZING that I created a dish with my mind and hands!  I hope you give this recipe a try and I hope you enjoy it as much as we do!



3 c Flour
1 1/2 c. sugar
1/2 t. salt
4 t. baking powder
2/3 c. coconut oil
2 eggs
2/3 c fresh orange juice
Zest from 2 oranges

1 C. powdered sugar
1/2 t. vanilla extract
1/8 t. almond extract
3-5 t. water

Pre-heat oven to 400 degrees.  Grease loaf pans. I split this recipe between two pans.

Mix all dry ingredients in a bowl.  Add wet ingredients and spread into pan.  Bake for approximately 20-24 minutes or until done. 

Turn out of pans to cool to room temperature.

Prepare the glaze by mixing the ingredients in a bowl. Spoon glaze over the cooled orange loaf and allow to dry. Serve with fresh berries or a spoon of berry sauce.  ENJOY!
